The nose suggests limestone and a sweet, fruity flavour initially. Once the whisky opens up (around 10 mins), apple peels, juicy melons, dry hay and extra virgin olive oil begin to surface. The overall feel is that of fruit tea and pollen with a hint of wax and honey.
Initial mouthfeel is a wee sharp on spice, but it encourages salivation. It’s slightly salty and grapefruits surface once the spice disappears. Flavours of olive oil, dry hay, tea, grapefruit pulp, apple peel, nutty biscuits and mint appear after a while. Adding water to the whisky opens up flavours such as vanilla ice-cream, apples, walnut biscuits, some pollen, tea and berry-like notes.
